Eat Smart: I can't believe that's healthy

Chocolate, candy, and cake? Sounds like a diet disaster. Not so fast! Registered dietitian Shelly Marie Redmond stopped by NBC 6 News Today to show some simple, tasty, and healthy spins on our favorite desserts!
Many of us have amazing and tasty ‘family’ dessert recipes we want to prepare for our favorite celebrations, and with a few small spins, we can pull out unwanted fat and calories without losing taste! Here are some of Shelly's favorites.
Ooey Gooey Raspberry Brownies
Who doesn’t love a brownie? Chocolate and sticky fingers sound great! Not the fat and calories. Most brownies are made with lots of butter, sugar, and eggs. We modified a traditional brownie recipe for the better!
1 cup vanilla Greek yogurt
1 tablespoon butter, melted
1/2 cup honey
3 tablespoons sugar
1/3 cup flour
3/4 cup cocoa
1/4 tsp salt
1 tsp of vanilla extract
1 mashed banana
2 tablespoons raspberry all fruit spread, melted (microwave for 10-30 seconds)
1 tablespoon (3 teaspoon) melted dark chocolate chips
1 - Preheat oven to 300 degrees.
2 - Combine all ingredients EXCEPT raspberry all fruit spread and melted dark chocolate chips in a bowl.
3 - Mix with hand mixer for 1-2 minutes.
4 - Line 8 x 8 pan with aluminum foil. Spray with non-stick cooking spray.
5 - Pour batter into pan.
6 - Bake 30-35 minutes.
7 - Remove from oven.
8 - Drizzle raspberry fruit spread AND chocolate on top.
9 - Cool.
10 - Cut and serve!
NOTE: We are saving over HALF the fat.
If using your own recipe, look at substituting Greek yogurt for butter by half. Example, if a recipe calls for a cup of butter, use 1/2 cup Greek yogurt, 1/2 cup butter. For eggs, substitute half the eggs for one mashed banana. One egg = 1 mashed banana. Substitute up to 1/2 cup honey for 1/2 cup of sugar.
‘Charming’ Cheesecake Bites
Cheesecake! From the Golden Girls to the name of an actual restaurant, we are obsessed with cheesecake. What are not obsessed with, the up to 500 calories a slice. By losing the crust and using only 3 ingredients - you will not only impress your friends but keep them around for a long time!
2 1/3 less fat cream cheese packages
1 can fat free condensed milk
2 tsp of vanilla extract
Optional toppings: crushed walnuts, melted dark chocolate, strawberries
1 - Place all ingredients in mixing bowl.
2 - Beat with hand mixer for 2 minutes.
3 - Pour mixture into 18 muffin tins.
4 - OPTIONAL: Add toppings - if using walnuts - sprinkle one teaspoon in each muffin tin.
5 - Freeze for one hour or refrigerate for 2-3 hours or until cake is firm.
6 - Serve!
NOTE: We cut out over HALF the fat with our simple recipe and this is a under 100 calorie dessert!
Fabulous ‘Fruit’ Pizza
This ‘sweet’ treat is high in flavor AND fiber!
8 small whole wheat tortillas or 4 large whole wheat tortillas (more than 5 gram fiber per serving)
1 package 1/3 fat cream cheese
2 tablespoons apricot all fruit spread
1 tsp vanilla extract
1/4 tsp cinnamon
Various cut up fruits
1 - Preheat oven to 400 degrees.
2 - Combine cream cheese, all fruit, vanilla extract, and cinnamon. Beat with hand mixer for 1-2 minutes. Place to the side.
3 - Spray tortillas with non-stick cooking spray on each side.
4 - Place in over for 10 minutes. (flip after 5 minutes)
5 - Remove from over. Allow to cool.
6 - Layer tortilla with 1 to 2 tablespoons of cream cheese mixture and fruit.
OPTIONAL: Drizzle in dark chocolate!
‘Southern Style’ Banana Pudding
Great for brunches and warm weather gatherings, this gorgeous dessert is full of taste and fat. With a few simple tricks and losing the wafers (no one will notice!) we turned this into a delicious dessert worthy of any event - brunch to a dessert for the family!
1/2 container fat free whipped topping
2 small ripe bananas, mashed
1 container (5-6 ounces) vanilla Greek yogurt
1 tsp vanilla extract
3 Bananas (sliced)
Additional whipped topping
1 - Combine whipped topping, bananas, vanilla extract, and Greek yogurt in bowl. Beat with hand mixer for one minute.
2 - Fold in 2 sliced bananas.
3 - Divide remaining banana slices and one layer of blueberries at bottom of 4 wine goblets OR place in glass serving dish.
4 - Layer banana pudding.
5 - Layer strawberries.
6- Finish with whipped topping.
