Eat Smart: No bake healthy desserts

Don't bring the sweltering heat inside the kitchen!  Our dietitian, Shelly Marie Redmond, of Eberhardt Physical Therapy and Wellness stopped by to give us the skinny on keeping our kitchens cool, waistline in check, and kids happy with these great no-bake desserts.
S'more Pops
10 large marshmallows
10-20 dark chocolate chips
2 full sheets gram crackers
¼ cup (original) Fiber One cereal
Lollipop sticks
1-Place gram crackers and Fiber one in a zip/sealed bag.  Crush.
2-Melt chips in microwave in 20 second increments.  Do NOT over cook.
3-Dip bottom section of marshmallow.
4-Sprinkle gram cracker mixture over chocolate.
5-Allow to dry.
6-Place marshmallow on lollipop stick.
Shelly's Skinny Tip:  These take the place of cake pops.  Remember cake pops - tons of ingredients, special equipment, a HOT oven, and one cake pop has 180 calories.  Our s'more pops - 4 ingredients, no fancy equipment, no stove, less than 50 calories.
Grasshopper Pie
½ cup whipping cream
1 container of light whipped topping (room temperature)
1 jar marshmallow cream
5 drops of green food coloring
½ tsp of peppermint extract
4 full sheets of chocolate gram crackers
½ cup of chocolate fiber one cereal
Gummy worms (for garnish)
1-With a hand mixer, beat whipping cream, whipped topping, marshmallow cream for 2 minutes.
2-Add ½ tsp of peppermint extract.  Beat for 30 seconds.
3-Fold in green food coloring.  Place mixture aside.
4-Place gram crackers and chocolate fiber one in a zipped/sealed bag.  Crush.
5-In 6 clear glasses (plastic is fine) evenly scoop whipped mixture.
6-Layer gram cracker mixture.
7-Place a gummy worm for garnish.
TIP:  Refrigerate or freeze cups before dishing in pie filling and topping.
Shelly's Skinny Tip: Traditional grasshopper pie calls for over 2 cups of cream and a chocolate crust, which translates to lots of fat and calories.  We 'skinnyed' this recipe by using only ½ cup whipping cream combined with a container of light whipped topping.  Our crust is a combination of crushed chocolate gram crackers and chocolate fiber one.
Marvelous Millionaire Pie
1 can fat free condensed milk
1 container of lite or free whipped topping (room temperature)
1 can crushed pineapple (in its own juice), drained
1 jar of Maraschino cherries
1 tablespoon of Maraschino cherry juice
¼ cup of lemon juice
½ tsp of lemon zest
½ cup chopped walnuts (reserve some for topping)
1-With a hand mixer beat condensed milk and whipped topping for 1 minute.
2-Fold in pineapple, cherries, cherry juice, lemon juice, lemon zest, and walnuts.
3-In 8 clear glasses, layer mixture.
4-Sprinkle walnuts.
Shelly's Skinny Tip:  We 'shellyfyed' our Marvelous Millionaire Pie with 2 small changes - a can of fat free condensed milk and lite whipped topping.
Cool Cookie Dough Dip
This Cool Cookie Dough Dip - no butter, no flour, no eggs is addictive and a party MUST.  While it is very tempting to eat this right out of the bowl - let's serve it with strawberries!
1 package of 1/3 fat cream cheese (softened)
1 4-ounce container of applesauce (or ¼ cup)
1 cup powdered sugar
3 tablespoons of brown sugar
1 teaspoon of vanilla extract
½ cup dark chocolate chips
Strawberries, pineapples, gram crackers
1-With a hand mixer, beat cream cheese and applesauce in bowl until combined.
2-Fold in powdered sugar, brown sugar, and vanilla extract.
3-With a hand mixer beat for 1 minute.
4-Fold in dark chocolate chips.
5-Serve with fruit and gram crackers.
Shelly's Skinny Tip: We cut down the sugar to a simple combination of powdered sugar and brown sugar, replaced the butter with applesauce and used 1 block 1/3 fat cream cheese.
