Eat Smart: Putting together a healthy 'Frozen' themed party

Have Elsa, Anna, and Olaf taken over your house?  You're in a real treat this morning as our dietitian, Shelly Marie Redmond, of Eberhardt Physical Therapy, as she will show us the tricks on throwing a 'Frozen' party with a healthy twist.

Let's get started with:

Magic Frozen Wands.....

Super simple, super tasty, and super gorgeous!  3-ingredients.

12 large marshmallows
White chocolate chips
Purple and blue sprinkles
Lollipop sticks
Blue ribbon (optional)

1-Place lollipop sticks in center of marshmallow.
2-Pour purple and blue sprinkles in shallow bowls or wax paper.
3-Melt white chocolate in microwave in 20 second increments.
4-Dip bottom (about 1/2 size of a dime) of marshmallow in white chocolate (do NOT dunk ENTIRE marshmallow in chocolate - only bottom)
5-Sprinkle OR dip chocolate portion of marshmallow in sprinkles.
6-Place on wax paper to dry.
7-Tie ribbon or decorate lollipop per party theme.

NOTE:  These Magic Frozen Wands replace cake pops.   1 cake pop - 170 calories, over 10 steps, baking/cooling time, and special utensils.  Our Magic Frozen Wands?  4 steps, non special utensils, no oven, and less than 50 calories. 

Candy bars are incredibly popular at parties and we created our own FROZEN candy bar. 

'Frozen' Candy Bar

1 container of vanilla Greek yogurt (large size, not 5oz)
Variety of strawberries, blueberries, raspberries

1-Wash all fruits.
2-Dip fruits in Greek yogurt.
3-Place on wax paper.
4-Freeze.  Serve!

NOTE:  Any leftovers?  Serve in your smoothies.

Let's move onto Olaf's corner.  How can we not love Olaf? 

Olaf Cheese Snowman

White Cheese Sticks
Black and Orange Sharpies

1-Draw Olaf hair, eyes, mouth, buttons in black sharpies and nose in orange.

'Do You Want to Build a Snowman' Party Mix

3 cups plain (rice) Chex mix cereal
3 cups of air-popped popcorn (or 94% fat free microwave popcorn)
2 cups marshmallows
2 cups pretzel sticks
1 cup blue and white M and Ms (or York Peppermint Patty Dark Chocolate Bites)

1-Combine all ingredients. 
2-Serve in clear glasses.

Moving onto Sven and Kristoff!

Sven and Kristoff 'Ice Cubes'

2 boxes of blue jello
3 packages of Know gelatin
1 can fat free condensed milk

1 - Spray dish with non-stick cooking spray.
2 - Jello layers - mix 1 pack of jello, 1 pack of gelatin, and 1 cup hot water.  Mix until all is melted.  Pour in dish.  Refrigerate for 1 hours.
3 - White layer - mix 1/3 cup fat free condensed milk, 1 pack of Knox gelatin, 2/3 cup hot water.  Mix until all is combined.  Pour over jello layer.  Refrigerate for 1 hour.
4 - Repeat #2.
5 - Sit overnight.
6 - Cut and serve.

Elsa and Anna Frozen Blueberry Cupcakes
1 1/3 less fat package of cream cheese (room temperature)
1 container of light whipped topping (defrosted)
3 tablespoons of sugar
2-3 drops of blue food coloring
Blueberries (optional)

1-Line 12 muffin tins with liners.
2-Beat cream cheese in bowl for 2 minutes.
3-Add whipped topping and sugar. 
4-Beat additional 2-3 minutes.
5-Fold in food coloring drops.
6-Pour in muffin tins.
7-Add blueberry garnish.

NOTE:  This  replaces cupcakes.  One cupcake - over 400 calories (thats more than a Happy Meal!) Elsa Cupcakes - Less than 100 calories!

Wash down these goods with our 'Blue Melted Snow!'

Blue Melted Snow

1 64 oz bottle Blue Gatorade
2 L diet lemon lime soda

1-Combine in punch bowl.

NOTE:  You can 'rim' glasses with blue sprinkles by dipping glass in white chocolate and adding sprinkles.
