Black bean brownies

1 can black beans
1 brownie mix

Purée and rinse black beans.
Combine beans and brownie mix.
Bake as directed on box.


Spaghetti squash

Poke holes in squash.
Microwave 5-8 minutes depending on your microwave.
Cut in half and de-seed.
Use a fork to scoop out spaghetti .
Top with your favorite sauce!


Cauliflower mash potatoes

1 head cauliflower
1 cup non fat Greek yogurt
Salt and pepper

Steam cauliflower.
Place cauliflower, yogurt and salt and pepper to taste in mixing bowl.
Using a hand mixer whip the cauliflower until it is the consistency of mashed potatoes.
