LOVING LIVING LOCAL – On today’s show, Biskie and Josh are in the kitchen making bacon pancake dippers. These are fun and easy to make and modify for a delicious breakfast that you can take on the go. See the recipe and instructions below.

INGREDIENTS:

  • 12 SLICES OF BACON, HALVED
  • 2 CUPS OF PANCAKE MIX, PLUS INGREDIENTS CALLED FOR ON BOX (WE SUBBED EGGS FOR APPLESAUCE)
  • 3 TBSP. BUTTER, DIVIDED
  • MAPLE SYRUP, FOR SERVING

INSTRUCTIONS:

  1. HEAT A LARGE NONSTICK SKILLET OVER MEDIUM HEAT, COOK BACON UNTIL CRISPY, 8 MINUTES. DRAIN ON A PAPER TOWEL- LINED PLATE. DISCARD FAT AND WIPE SKILLET CLEAN.
  2. MEANWHILE, PREPARE PANCAKE BATTER ACCORDING TO BOX INSTRUCTIONS. 
  3. ADD 1 TABLESPOON BUTTER TO SAME SKILLET OVER MEDIUM HEAT AND MELT. 
  4. USING TONGS, COAT EACH BACON HALF IN PANCAKE BATTER. WORKING IN BATCHES, ADD BATTERED BACON TO SKILLET AND COOK UNTIL BUBBLES BEGIN TO FORM ON SURFACE OF BATTER, ABOUT 2 MINUTES. FLIP AND COOK 2 MINUTES MORE. REPEAT UNTIL ALL BACON DIPPERS ARE COOKED, ADDING MORE BUTTER TO SKILLET AS NEEDED BETWEEN BATCHES. 
  5. SERVE BACON DIPPERS WITH MAPLE SYRUP.
