LOVING LIVING LOCAL – On today’s show, Biskie and Josh are in the kitchen making bacon pancake dippers. These are fun and easy to make and modify for a delicious breakfast that you can take on the go. See the recipe and instructions below.
INGREDIENTS:
- 12 SLICES OF BACON, HALVED
- 2 CUPS OF PANCAKE MIX, PLUS INGREDIENTS CALLED FOR ON BOX (WE SUBBED EGGS FOR APPLESAUCE)
- 3 TBSP. BUTTER, DIVIDED
- MAPLE SYRUP, FOR SERVING
INSTRUCTIONS:
- HEAT A LARGE NONSTICK SKILLET OVER MEDIUM HEAT, COOK BACON UNTIL CRISPY, 8 MINUTES. DRAIN ON A PAPER TOWEL- LINED PLATE. DISCARD FAT AND WIPE SKILLET CLEAN.
- MEANWHILE, PREPARE PANCAKE BATTER ACCORDING TO BOX INSTRUCTIONS.
- ADD 1 TABLESPOON BUTTER TO SAME SKILLET OVER MEDIUM HEAT AND MELT.
- USING TONGS, COAT EACH BACON HALF IN PANCAKE BATTER. WORKING IN BATCHES, ADD BATTERED BACON TO SKILLET AND COOK UNTIL BUBBLES BEGIN TO FORM ON SURFACE OF BATTER, ABOUT 2 MINUTES. FLIP AND COOK 2 MINUTES MORE. REPEAT UNTIL ALL BACON DIPPERS ARE COOKED, ADDING MORE BUTTER TO SKILLET AS NEEDED BETWEEN BATCHES.
- SERVE BACON DIPPERS WITH MAPLE SYRUP.
