LOVING LIVING LOCAL – To celebrate National Coffee Cake Day, Biskie and Josh make a raspberry coffee cake. Below is a list of ingredients and instructions you’ll need to make this recipe.
STREUSEL INGREDIENTS:
- ⅔ C. ALL PURPOSE FLOUR
- ½ C. BROWN SUGAR PACKED
- ⅓ C. BUTTER SOFTENED
- ½ TSP. GROUND CINNAMON
CAKE INGREDIENTS:
- 1 BOX WHITE OR YELLOW CAKE MIX
- ⅓ C. GRANULATED SUGAR
- 8 OZ. CREAM CHEESE SOFTENED
- 3 EGGS
- ½ C. VEGETABLE OIL
- ¼ C. WATER
- 3 C. RASPBERRIES
STREUSEL INSTRUCTIONS:
- COMBINE FLOUR, BROWN SUGAR, BUTTER, AND CINNAMON. MIX UNTIL CRUMBLY, SET ASIDE.
COFFEE CAKE INSTRUCTIONS:
- COMBINE CAKE MIX, SUGAR, CREAM CHEESE, EGGS, OIL, AND WATER. BEAT WITH AN ELECTRIC MIXER ON LOW SPEED UNTIL WELL BLENDED AND SMOOTH
- SPREAD HALF OF THE BATTER IN THE GREASED 9×13 PAN
- SCATTER RASPBERRIES OVER BATTER
- SPREAD REMAINING BATTER OVER BERRIES
- SPRINKLE STREUSEL EVENLY OVER THE TOP
- BAKE FOR 40 – 45 MINUTES
- COOL FOR 30 MINUTES
- SERVE WARM OR COOL
