Eating healthy in college made simple


Skinny Louisiana founder, Shelly Marie Redmond, shares ways to stay healthy this school year. 

Skinny Blueberry Muffins
1 6 oz container of Greek yogurt 
3/4 cup Swerve
2 eggs
1/2 cup Fairlife milk
2 cups of Carbquik
Dash of salt
2 tsp baking powder
2 cups frozen blueberries
Preheat oven to 400 degrees.
In a large bowl, combine Greek yogurt and Swerve. Beat for 1 minute.
Add 2 eggs and Fairlife milk.  Beat for 1 minute.
Add Carbquik, salt, and baking powder. Beat for 1 minute.
Stir in blueberries.
Fill 3/4 full in a muffin tin.
Bake for 25-30 minutes.
Skinny Egg Muffins
6 eggs
6 egg whites
1 cup diced ham
1/2 cup Borden Cheese, Shredded Cheddar
1 tsp Tony’s Light
Preheat oven to 350.
Combine all ingredients in a large bowl.
Fill muffin tins 3/4 way.
Bake for 20-25 minutes.
