2 large red bell peppers, roasted, peeled, seeded and coarsely chopped
1 large roma tomato, seeded and coarsely chopped
1 garlic clove, minced
1/4 cup whole almonds, toasted or untoasted
1/3 cup olive oil, plus more as needed
2 Tbs. sherry vinegar or red wine vinegar, plus more as needed
1 ½ tsp. smoked paprika
1 tsp. kosher salt, plus more to taste
Put in a food processor or blender, combine all in ingredients and process until well blended, scraping down the sides as needed. Adjust consistency and taste with olive oil, vinegar and salt as needed. Makes about 1 cup.
